You know, I’m sometimes grateful for Facebook. Because it reminds me of past posts that were mostly personal things that were special to me. Like this photo that popped up.
It’s a picture taken by my sister several years ago. She was a lover of flora and fauna of all kinds. Even when a clever young squirrel figured out a way to breach her new “ Squirrel-Proof “ bird feeder. It made me remember her and smile when this photo popped up in my Facebook Memories!
I ran across a recipe for Mini Apple Pie Bites at my newest favorite recipe site, Simple Nourished Living. Martha also has a Facebook page I follow. I purchased some Fiji apples, a bit cheaper than the Honeycrisp we are so fond of . One arrived in my pick up order already bruised, so I needed to use it. It was warm/hot for a couple of days, and I didn’t really want to use the oven. So I cooked the apples per the recipe on the stovetop and refrigerated the “pie filling”. Apple Pie Bites. Then on the 4th is was chilly and cloudy and rainy, so I fired up the oven. 
After I cut rounds of dough for the mini pies, there were scraps left, of course. I rolled it out and used the rest of the apples in a mini crostata. Fun easy and pretty yummy!
Friday, Mr Busy and I usually go out to eat. We call it Date Night. Last Friday, we totally forgot! Both of us! Talk about living the “same old routine”! Anyway we went Saturday to a Mexican restaurant in our town. Mexican is a favorite cuisine. The margarita was outstanding and my chicken chimichanga was wonderful!
We’re binging on S.W.A.T. mostly, these evenings and also sitting around the fire table!
You can spy Mr. Busy’s quilt covered knees on the right. He has been wearing shorts, but evenings are still a bit cool! And the mosquitoes like him. Guess cause he’s so sweet!

Fair Food!
Some typical vendor trucks at fairs! The ones at our county fairs aren’t quite so elaborate, but I have seen a few like this.
My favorite fair food, Corn Dogs,
Indian Fry Bread,
and Fresh Squeezed Lemonade! I’ve even been known to share with a certain little guy!

This year it was gloomy, but during the county parade, there was a flyover of a B-1B Lancer bomber from nearby Ellsworth AFB. My photos from the top of the hospital parking garage.
That fire table looks nice, bet it feels great during your chilly weather! Oh give me some of that apple crostata - yum. I also mentioned Indian tacos in my post - lol! Mexican cuisine is my favorite "dining-out" food too. I am content with margaritas and chips and salsa, but of course I never stop there. ;)
ReplyDeleteThe squirrel in the "squirrel-proof" feeder is hilarious! Your Apple Pie Bites look yummy - just the right size, too. It's good that date night can be any night! I just tried Indian Fry Bread in Arizona when we were there in January, and it was good! Hope you're warming up and drying out up there - we keep getting storms. Woke up to some rain again this morning.
